To prepare the dough you need the following:

1 ¼ c. lukewarm water
¼ c. sugar
4 t. active dry yeast
475 g. plain flour
1 T. gluten
4 t. baking powder
1 T. vinegar
½ t. salt
¼ c. vegetable oil

In bowl sift flour, baking powder, gluten and salt.

In a separate bowl dissolve yeast in lukewarm water and add sugar, stir until sugar is dissolved, and add vinegar and oil.

Add together the liquid and flour mixture and knead to fairly soft dough on a lightly floured board until smooth and elastic. ( if you don’t have gluten,instead add 1 t. bread improver or else don’t worry about it).

Divide dough into 12 portions and shape into a smooth ball and roll out each piece on a lightly floured board to a circle and put a tablespoonful of filling in center of a circle and gather edges together, folding and pleating to make a neat join and twist dough to seal.

Put each bun; join downwards on a square of greaseproof paper lightly brush with sesame oil. Let rise for about 15-20 minutes or until nearly double in size.

Prepare steamer with cheesecloth and steam buns for 20- 25 minutes depending on size.
Serve with ketchup or any sauce of your choice.

Cooked buns can be refrigerated overnight and reheated by steaming for about 3 minutes or warm up in the microwave oven for a minute before serving.


450 g. lean pork, diced very small
2 T. peanut oil
2 T. finely chopped onions
2 cloves garlic, minced
¼ t. salt
1 T. oyster sauce
1 T Hoi sin sauce
1 T. light soy sauce
1 t. sugar
1 t. sesame oil
3 t. corn flour
2 T. cold water

Heat peanut oil in a pan, add garlic, onion and salt, and cook not allowing garlic to brown. Add pork, oyster sauce, soy sauce, hoi sin sauce, sesame oil and sugar and cook in low heat and keep stirring until meat is cooked.
Mix corn flour with 2 T. cold water and stir in, then cook stirring until thick and clear.

Cool before filling up the dough.

Note: Filling can be pork asado, chicken, bola-bola or barbequed pork.
If you buy a small bottle of sesame oil and oyster sauce so as a small jar of hoi sin sauce it comes handy when you like to make some stir fries.
