Simmered Pigs Trotters

½ kg. Pigs’ trotters, cut into serving pieces
3 cloves garlic, sliced
1 t. dark soy sauce
¼ t. salt
¼ t. cracked pepper corns
3 T. cider or white vinegar
2 c. hot water or more
¼ t. black beans (optional
¼ t. sugar
Bunch of spring onions
Marinate pigs’ trotters and all the other ingredients except black beans, spring onions and water.
Put the marinated trotters in a heavy saucepan and bring to boil for 2 minutes.
Add water to cover trotters, black beans and simmer.
When trotters are almost tender add sugar and spring onions until onions is soft and season to taste.
