Mango Clafoutis

4 large eggs 1/3 c. sugar
½ c. nestle reduced fat cream or fresh cream
1 t. vanilla
1/3 c. flour
2 ripe mangoes, stoned and sliced
a handful of red cherries or raspberries for decoration
Icing sugar

Preheat the oven to 175 deg C...
Grease well with butter a ceramic or a Pyrex baking dish and set aside.
Beat eggs and sugar with an electric beater until creamy or use a wooden spoon.
Add cream, vanilla and beat to combine.
Sift flour over the creamed mixture and blend until smooth.

Pour ¾ of the batter into the prepared baking dish to cover the bottom and bake for 5 minutes.
Remove baking dish from oven and arrange mango slices and cherries or raspberries over the batter, and top with the remaining batter and bake clafoutis for about 25- 30 minutes until it is set or when tested and skewer comes out clean.
Remove from oven to cool and dust with icing sugar if desired and serve with ice cream or whipped fresh cream.

Clafoutis is a simple easy recipe to prepare and delightfully creamy and it is a perfect accompaniment to brunch or make it a delicious dessert. Clafoutis are traditionally made with black cherries but any stone fruit works well like plums, prunes, cranberries and is very delicious with fresh mangoes.
If fresh ripe mangoes are hard to get use the ones in cans.
