1 chicken breast, diced (boneless & skinless)
250 g. lean pork diced or use ground pork
250 g. shrimps, skinned
1 c. carrots cut into thin strips
125 g. fresh bean sprouts
250 g. shredded cabbage
4 cloves garlic, finely chopped
½ c. finely chopped onions
2 tsp. salt
1 Tbsp. beef stock powder
½ tsp. ground black pepper
Cooking oil for deep frying
2 Tbsp. peanut oil or ordinary cooking oil
1 Tbsp/ sesame oil (optional)
Frozen spring roll wrapper is available from Chinese grocery stores. Thaw before attempting to separate this delicate pastry.

Heat peanut oil and sesame oil in a wok and slowly fry garlic over low heat then add onions and fry for a few seconds.
Add pork, chicken and raise heat and fry until it changes its colors.
Add prawns and continue stirring until cooked.
Then add carrots and stir fry for a few seconds and add the cabbage – toss until cabbage is nearly tender but still crunchy.
Add seasoning, mix well, and then drain away excess moisture.
Allow to cool completely

Put 2 Tbsp. of mixture at one end of spring roll wrapper and roll up turning in the sides so that the filling is completely enclosed.
Dampen edges with a little it of water (using a pastry brush or your fingers) and press to seal.

Fry one or two at a time in deep hot oil until golden brown and crisp. Drain on absorbent paper and serve hot with spring roll sauce or your choice of sauce (sweet chili sauce, ketchup or plain tomato sauce).

This recipe is rather a kind of a special spring roll. You can make spring rolls with only ground pork or beef, or only chicken mince with cabbage and carrots. Some times I do use crab meat instead and shredded cabbage. Please remember that-if you intend to freeze up your spring rolls don’t add bean sprouts in your mixture as this will make your spring roll a little bit soggy once you defrost it. Spring rolls can be made weeks before the party.

Sauce for Spring roll:
2 Tbsp. sugar
2 Tbsp. light soy sauce
½ c. water
1 Tbsp. cornflour, mix with a little bit of cold water
Clove of garlic, crushed
Salt & ground white pepper
Combine sugar, soy sauce and water. Bring to boil and add cornflour mixture, stir and simmer for a minute until sauce starts to thickens and add garlic, salt & pepper. Season to taste.
