Light Fruit Cake

500 g. fruit cake mix
3 beaten eggs
1 t. vanilla essence
225g. chopped butter
400 g. plain flour
3 t. baking powder
300 g. sugar

Put fruit into a medium size pot and just cover with water and boil for 15 minutes.
Take off from stove stop and add chopped butter straight away, stir until butter has melted.
Then add sugar, stir well and add beaten eggs. Stir.
Sift flour and baking powder and add to the fruit mixture. Mix well and add vanilla essence. Pour into greased and lined baking tin and bake at 150 deg. C / 300 deg. F for 1 – 2 hours or when tested & skewer comes out clean.

I double up the recipe and as you can see on the attachments below I used a 26 x 26 cm.x 8 cm. deep square baking tin and a 24 cm can from a fruit juice for a candle shape fruit cake. My hubby and my two sons love eating it without the icing.
