Lamb Stew with Peanut Sauce

This is similar to Kare-Kare only I use lambs meat on this recipe instead of oxtail.

750 g. lambs meat, boneless cut into serving pieces
1 onion cut into cubes
2 cloves garlic, crushed
2 Tbsp. cooking oil
10 pieces long green beans, cut into 2” lengths
¾-1 c of peanut butter or a packet of Kare-Kare mix sauce
1 c. water
8 pechay leaves (bokchoy)
1 eggplant

Sauté garlic and onions, add meat, cover and simmer for a few minutes and then add water, bring to boil lower heat and simmer until meat is tender leaving about 1 ½ c. broth and add vegetables and sauce and let simmer in very low heat until all vegetables are done and sauce thickens. Season to taste if using peanut butter.
Serve with hot rice and (bagoong) sautéed shrimp fry.
