10 cooked small new potatoes, cut into small cubes
1 c. cooked or roast cooled meat, chopped (roast pork, roast beef, ham or roast chicken)
½ c cooked and sliced beet
3 hard boiled eggs, sliced
3 small gherkins cut into smaller cubes
1 small onion or scallion, finely chopped
3 T. olive oil
2 T. cider vinegar
½ t. salt
Pinch of ground black pepper
½ c. mayonnaise
2 small tomatoes, sliced
In a bowl combine the potatoes, meat, gherkins, beet, half of the boiled eggs, and onions.
In a separate small bowl mix together half of the mayonnaise, oil, salt, vinegar, and pepper and pour over the potato mix and toss gently together.
Arrange the lettuce leaves on a salad platter and scoop the potato mix on top of the lettuce leaves and cover with a thin layer of mayonnaise.
Decorate with slice gherkins, tomatoes and sliced eggs.
