Hot Cross Buns

4 cups plain flour
4 tsp. dry yeast
1 Tbsp. mixed spice
1 tsp. cinnamon
½ c. caster sugar
50 g. butter or ½ c. cooking oil
1 egg, beaten
1 c. warm milk
¼ c. water
1 c. raisins or dried mixed fruit
In the food processor put flour, sugar, yeast and spice and process for 2 minutes until well combined.
Keep the motor running and add the liquid to the dry ingredients until well combined.
Turn mixture onto floured board and add mixed dried fruit and knead properly, until dough is smooth and elastic.
Place in greased bowl, cover with cloth and leave to rise in a warm place for an hour.
Divide dough into 12 round buns and arrange in baking pan 2 cm. apart, cover and leave to rise for 30-40 minutes.
Preheat oven to moderately hot 210 deg C.
Pipe a cross on each bun and bake for 30-35 minutes, or until golden brown.
You can brush glaze over buns while it is still hot.
For crosses mix ¼ c plain flour and ¼ c. water and fill a piping bag with the mixture.
For glaze mix 1/3 tsp. gelatin. 2 tsp sugar and 1Tbsp. water in a sauce pan over low heat until dissolved.
