4½ c. plain flour
4 t. baking powder
1 c. milk
1 t. instant yeast
4 T. caster sugar
3 eggs beaten
100 g. butter, melted
1 t. salt
Flour for kneading
Oil for deep frying
4 T. cinnamon combine with ½ c. caster sugar
Sift flour and baking powder in a bowl and make a well in the center and set aside.
Beat milk, sugar and yeast together and pour into the well.
Combine butter eggs and salt and pour into the flour and mix to form soft light dough.
Knead well and roll into an inch thick and cut using a doughnut cutter and let stand for 4-5 minutes.
Heat the oil in deep pan or deep fryer and fry doughnuts at a time and fry until crisp and golden.
Drain on absorbent paper and roll in cinnamon/sugar mixture
If you haven’t got a doughnut cutter divide dough into small balls the size of an egg and make a hole in the center.
