Sweet and Sour Meatballs

Serves: 6

2 eggs, beaten
250 g. minced pork
250 g. minced beef
1 Tbsp. salt
¼ t. ground pepper
2 Tbsp. beef stock powder
2 cloves garlic, minced
¼ c. spring onions, finely cut
1 small onion, finely chopped
1/2 c. breadcrumbs
1/2 c. all purpose flour or plain flour
Cooking oil for frying

Combine all the ingredients, add a little bit of water if necessary and chill for 30 minutes. Form into meatballs (your desired size) and dredge on corn flour. Keep the remaining corn flour for the sauce. Heat the cooking oil in a deep frying pan or deep fryer and fry meatballs until golden brown. Set aside and keep it warm in the oven while preparing the sauce.

3 Tbsp. cooking oil
1 onion, sliced
2 cloves garlic, finely sliced
½ c. carrots cut into strips
½ each green & red pepper bell (capsicums), sliced
2 Tbsp. maggi soy sauce or knorr liquid seasoning
2 Tbsp. tomato paste
2 c. water
1 ½ Tbsp. sugar
1 Tbsp. salt
3 Tbsp. vinegar.
250 g. pineapple pieces
1 tsp. corn flour in ¼ c. water

Heat oil in a wok and fry garlic, onions and add carrots and stir fry until carrots is almost cooked. Add tomato paste, water, soy sauce, salt, vinegar, sugar and capsicums. Bring to boil while stirring constantly and add the corn flour, simmer until thick. Season to taste, add the meatballs and pineapple pieces and toss gently. Just before serving garnish with spring onions, coriander leaves, mint leaves or any veggies that you wish.

You can set aside half of the meatballs without sauce on a different serving dish.

Variations : IN place of making your own sauce you can use the instant sweet & sour mixes from the supermarket if you find it much easier to prepare.
