Sushi Rolls

Sushi Rolls

1 c. short grain rice (basmati rice or sushi rice)
2 c. water
2 Tbsp rice vinegar
1 Tbsp. refined white sugar
1 tsp. salt
2-4 sheets nori
1-2 g. smoked salmon or crab meat
½ c. cucumber, sliced thinly in strips
½ c. carrots, sliced thinly in strips
½ avocado, slice in strips
2 Tbsp. mayonnaise
¼ c. pickled ginger

Mix the dressings- salt, sugar and vinegar. Set aside.

Wash and cook rice (absorption method). When done mix together rice and the dressing gently but thoroughly and cool to room temperature.

Put a sheet of nori on a bamboo place mat and spread enough amount of rice evenly over 2/3 of the sheet of nori starting at the end nearest you. Spread with mayonnaise and in row down the middle of the rice put one or a combination of ingredients as above.

Roll up sushi in the bamboo mat keeping firm pressure on the rice so that you have a neatly packed cylinder results. Let the rolls rest for 10 minutes before cutting into six pieces.
Arrange on a tray; decorate with pickled ginger or lettuce leaves finely cut into fancy shapes and serve cold with wasabi or soy sauce.

Wasabi or wasabe – is a pungent green horseradish used by the Japanese.
It comes in powder form and is reconstituted (like mustard) by addition of a little cold water, or you can buy it in any supermarkets or Chinese grocery shops.

Nori – (dried laver) a type of edible seaweed.

Sushi is the equivalent of an open sandwich. Rice flavored with vinegar and sugar dressing that takes the place of bread and is topped with various kinds of fillings, such as raw fish, pickled or fresh vegetables such as carrots, capsicums or peppers, cucumber, avocado or egg omelet, and in some cases instead of wrapping sushi’s with nori it is enclosed in omelets or bean curd.

A selection of sushi can make a complete lunch. Among the most popular types of sushi are:

Nigiri sushi – rice with raw fish
Norimaki sushi – rice rolled in seaweed
Fukusa sushi – rice wrapped in omelet
Inari sushi – rice with seafood and vegetables. And all of these can be served with wasabi or maggi soy sauce.
