Banana Loaf

300 g. plain flour
½ t. baking soda dissolved in ¼ c. lukewarm water
¼ t. salt
2 T. baking powder
½ c. cooking oil
½ c. sugar
2 eggs
¾ c. over ripe bananas, mashed


Lightly greased and line a 23 x 23 cm. loaf tin.
Sift together flour, salt and baking powder. Set aside.
In a separate large bowl beat eggs and sugar until smooth, add cooking oil and beat well.
Then add dissolved baking soda and mashed bananas until well mixed.
Stir in sifted flour into banana mixture and stir well.
Pour batter into prepared loaf tin and bake at 180 deg. C for 45 minutes to 1 hour or when skewer inserted comes out clean.
Let loaf cool in tin for 5 minutes then turn out on to a wire rack.
Optional: you can add raisins, walnut or cinnamon.
