500 g. sultanas
1 ½ c. water
125 g. butter
1 c. sugar
½ c. cooking oil
3 large eggs, beaten
350 g. all purpose flour
3 t. baking powder
½ t. salt
A t. almond essence
1 t. vanilla essence
In a medium size pot boil sultanas in 1 ½ c water for 10 minutes.
Add butter and sugar, stir until it’s melted.
Add cooking oil, essences and eggs.
In a large mixing bowl sift together flour, baking powder, salt and pour in the sultana mixture and mix thoroughly.
Pour into a lined and greased baking pan and bake at 150 deg C for 45 minutes or when a skewer comes out clean when tested.
For better results boil sultanas the night before or a few hours before baking time.
