Brazo de Mercedes

10 egg whites
1 c. sugar
1 t. cream of tartar
½ t. vanilla essence

Beat egg whites and cream of tartar until it forms soft peak and add sugar gradually beating continuously with an electric beater.
Add vanilla essence and spread meringue on to a jelly roll pan lined with wax paper and greased well.
Bake in moderate oven until a skewer inserted comes out clean.
Remove from oven and invert on a greased sheet of wax paper and spread with the filling and roll into a log.

Filling: ¼ c. condensed milk and egg yolk.

When you decide to make the brazo de mercedes you can use the egg yolks for the leche flan, so at he same time you will have two kinds of desserts.
