Cream Cheese Fruit Cake

3 eggs
100 g. butter
1/3 c. cooking oil 250 g. cream cheese
1 c. caster sugar
2 c. plain flour
2½ t. baking powder
1 ½ c. fruit cake mix
2 T. lemon rind
2 t. lemon juice

Line and grease a baking tin and set aside.
In a mixing bowl cream butter, oil, cream cheese, lemon juice and lemon rind until fluffy.
Add sugar and beat well and gradually add eggs.
Sift in the cream mixture the flour and baking powder, add the fruit cake mixture and stir well.
Spread into prepared baking tin and bake in moderate oven at 150 deg. C for 60 minutes or until golden brown and skewer comes out clean when tested, can be covered with tin foil if its get too brown before it’s done.
