Christmas Steam Pudding

125 g. butter, softened
125 g. cooking oil
5 eggs
3 T. golden syrup
1 k. mixed fruit
1 c. flour
1/2 t. ground ginger
1 t. ground gloves
1 t. ground nutmeg
4 t. cinnamon
2 c. stale breadcrumbs
½ c sherry or port

Grease a pudding basin and set aside.

In a mixing bowl cream butter, oil and sugar together until light and fluffy. Add eggs at a time, beating well after each addition. Stir in the golden syrup and mixed fruit. Sift in flour and all the spices and stir well. Add breadcrumbs and sherry into the fruit mixture and stir until they are well combined.
Spoon the mixture into the pudding basin. Cover with greaseproof paper and aluminum foil and secure with string. Steam for 3 ½ hours or until a skewer inserted comes out clean. Allow pudding to cool completely before storing. Steam for another hour or so before it is be served.

You can served Steam pudding with warm vanilla custard or an ice cream.
